Although your son hasn’t liked reward charts in the past, I think you should still use them — after a while he will recognise that you are sticking to your plan and will reason that it is better to earn a reward than to go without one and his bottle. You could reduce the amount every night or give him warm milk in a trainer cup, and then a beaker, as he slowly gets used to different ways of drinking the milk in a more age-appropriate manner. If you go cold turkey then you could try a method called gradual withdrawal, where you sit by him until he gets to sleep (moving farther and farther away over time), or if he protests try the rapid-return method, where you continue to take him back to bed with no discussion or reinforcement until he falls asleep. Yes, he might be distressed for a while, but then children are when a boundary is set and new skills need to be learnt.
